Crispy Crab Cakes with Remoulade

Ingredients

Instructions
- Make the remoulade first by whisking together 1/2 cup mayonnaise, 1 tablespoon chopped capers, 1 tablespoon Dijon mustard, 1 teaspoon hot sauce, and 1 teaspoon lemon juice in a small bowl; cover and refrigerate until serving.
- In a large bowl, gently combine 1/4 cup mayonnaise, 1 beaten egg, 1 tablespoon Dijon mustard, 1 teaspoon Old Bay, 1 tablespoon Worcestershire sauce, 2 tablespoons chives, and 1/4 teaspoon salt.
- Add the crab meat and 1/4 cup of the panko breadcrumbs to the bowl, and fold together gently with a rubber spatula, taking care to keep the lumps of crab as intact as possible.
- Divide the mixture into 8 equal portions and gently shape each into a patty about 1 inch thick.
- Spread the remaining 1/4 cup panko breadcrumbs on a plate and lightly press each patty into the crumbs on both sides to coat.
- Place the crab cakes on a parchment-lined plate or tray and refrigerate for at least 30 minutes; this chilling step is essential for helping them hold together while frying.
