Classic Banana Walnut Bread
A moist, tender quick bread made from very ripe bananas, warm spice, and toasted walnuts, mixed in one bowl with no yeast or waiting. The kind of loaf that gets better on day two.
Ingredients
- 3 very ripe bananas, mashed (about 1 1/2 cups)
- 1/3 cup unsalted butter, melted
- 3/4 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon fine salt
- 1/2 teaspoon ground cinnamon
- 1 1/2 cups all-purpose flour
- 3/4 cup walnuts, roughly chopped and toasted
- 1 tablespoon turbinado sugar, for topping
Instructions
- Preheat the oven to 350F and grease a 9x5-inch loaf pan, then line it with a strip of parchment paper for easy removal.
- In a large bowl, mash the 3 ripe bananas with a fork until mostly smooth with a few small lumps.
- Whisk the 1/3 cup melted butter into the mashed bananas until combined.
- Whisk in the 3/4 cup brown sugar, 1 egg, and 1 teaspoon vanilla until smooth and glossy.
- Sprinkle the 1 teaspoon baking soda, 1/2 teaspoon salt, and 1/2 teaspoon cinnamon evenly over the batter and whisk in.
- Add the 1 1/2 cups flour and fold gently with a spatula just until no dry streaks remain; do not overmix or the loaf will turn dense and tough.
- Fold in 1/2 cup of the toasted walnuts, reserving the rest for topping.
- Pour the batter into the prepared loaf pan and smooth the top with the spatula. Scatter the remaining walnuts and the 1 tablespoon turbinado sugar over the surface.
- Bake at 350F for 55 to 65 minutes, tenting the top loosely with foil after 35 minutes if it's browning too quickly, until a toothpick inserted in the center comes out with only a few moist crumbs.
- Cool the loaf in the pan on a wire rack for 15 minutes, then lift it out using the parchment and cool completely, at least 1 hour, before slicing.
Why You'll Love This
- One-bowl mixing with no mixer or yeast makes this an easy weekend bake
- Extra-ripe, spotty bananas give natural sweetness and deep flavor
- Toasted walnuts both inside and on top add crunch and nutty aroma
Use bananas that are heavily speckled or fully black-skinned; their concentrated sugars and softer texture make the loaf noticeably moister than bananas that are merely yellow.
Tenting the loaf with foil partway through baking prevents the top and nuts from over-browning before the dense center finishes cooking.
