Instructions

- Reheat the cream mixture until steaming again, then slowly ladle about 1 cup of it into the egg yolks while whisking constantly to temper them.
- Pour the tempered yolk mixture back into the saucepan with the remaining cream, whisking to combine.
- Cook over medium-low heat, stirring constantly with a wooden spoon or spatula, for 5 to 7 minutes, until the custard thickens enough to coat the back of the spoon and a finger drawn through leaves a clean line - do not let it exceed 180F or it may curdle.
- Immediately strain the custard through a fine-mesh sieve into a clean bowl set over an ice bath, discarding the vanilla pod.
- Stir in the vanilla extract, then stir occasionally as the custard cools over the ice bath for about 20 minutes.
