No beans, no tomatoes, just big chunks of beef simmered low and slow in a deeply spiced dried-chile sauce. This is Texas-style chili con carne the way competition cooks make it.

- 4 dried ancho chiles, stemmed and seeded
- 3 dried guajillo chiles, stemmed and seeded
Instructions
- Toast the dried ancho and guajillo chiles in a dry skillet over medium heat for 30 to 45 seconds per side, pressing gently, until fragrant and pliable but not blackened.
