  • 3-5 tablespoons cold water, to thin the dressing

Instructions

  1. Preheat the oven to 400 F and line a baking sheet with parchment paper.
  2. Toss the dried chickpeas with 1 tablespoon olive oil, the cumin, smoked paprika, and 1/4 teaspoon salt on the prepared baking sheet.
  3. Roast the chickpeas for 22 to 25 minutes, shaking the pan halfway through, until they are golden and crisp on the outside; let them cool on the pan.
