Chocolate Souffle
A dramatic, cloud-light chocolate souffle rises tall in the oven and has a molten, fudgy center hiding beneath its delicate crust. Serve it the instant it comes out.
Ingredients
- 2 tablespoons unsalted butter, softened, for ramekins
- 1/4 cup granulated sugar, plus more for ramekins
- 6 ounces bittersweet chocolate (60-70%), chopped
- 3 tablespoons unsalted butter (for batter)
- 3 large egg yolks
- 1 teaspoon vanilla extract
- 5 large egg whites
- 1/4 teaspoon cream of tartar
- 1 pinch salt
- 1 tablespoon powdered sugar, for dusting
Instructions
- Generously butter four 6-ounce ramekins with the softened butter, brushing in upward strokes, then coat the inside with granulated sugar, tapping out the excess. Chill the ramekins while you prepare the batter.
- Heat the oven to 400F with a baking sheet inside to preheat.
- Melt the chopped chocolate and 3 tablespoons butter together in a heatproof bowl set over barely simmering water, stirring until smooth. Remove from heat and cool slightly.
- Whisk the egg yolks and vanilla into the melted chocolate mixture until glossy and fully combined.
- In a clean, dry mixer bowl, beat the egg whites with the cream of tartar and salt on medium speed until foamy, then gradually add the 1/4 cup sugar and increase speed to medium-high, beating until glossy stiff peaks form, about 3 minutes.
- Fold one-third of the egg whites into the chocolate base to lighten it, stirring firmly to combine.
- Gently fold in the remaining egg whites in two additions using a large spatula, cutting down and folding up to preserve as much air as possible - stop as soon as no white streaks remain.
- Divide the batter evenly among the prepared ramekins, filling almost to the top, and run your thumb around the inside rim to help the souffles rise evenly.
- Place the ramekins on the preheated baking sheet and bake for 12 to 14 minutes, until the souffles have risen 1 to 2 inches above the rim and the tops look set but still jiggle slightly in the very center.
- Do not open the oven door during baking, as the temperature drop can cause the souffles to collapse.
- Dust immediately with powdered sugar and serve within 1 to 2 minutes of removing from the oven, while still puffed and warm.
