Ingredients

  • 1 ciabatta loaf, halved and split
  • 3 tablespoons pesto
  • 8 ounces fresh mozzarella, sliced
  • 1 large tomato, sliced
  • 1/2 cup fresh basil leaves
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic glaze
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  1. Split the ciabatta into two equal sandwich portions, then slice each portion open horizontally.
  2. Spread 1.5 tablespoons of pesto evenly on the inside of each top half.
  3. Layer sliced mozzarella and tomato on the bottom halves, then season lightly with the kosher salt and black pepper.
  4. Tuck fresh basil leaves over the tomato, then close the sandwiches with the pesto-covered top halves.
  5. Brush the outside top and bottom of each sandwich lightly with olive oil.
  6. Heat a panini press or heavy skillet over medium heat for 2 minutes.
  7. Place the sandwiches in the press or skillet and cook for 3 to 4 minutes, pressing down if using a skillet, until the bread is golden and crisp on the first side.
  8. Flip if using a skillet and cook 3 to 4 minutes more, until the second side is golden and the mozzarella has melted (check by gently pressing the center for softness).
  9. Remove from heat and let rest for 1 minute so the cheese sets slightly.
  10. Slice each sandwich in half, drizzle with balsamic glaze, and serve warm.
