Instructions

  2. Let the toasted rice cool slightly, then grind it into a coarse powder using a spice grinder or mortar and pestle; set aside.
  3. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  4. Add the ground chicken and the 0.5 cup broth or water, breaking the meat up with a spatula, and cook for 6 to 8 minutes, stirring frequently, until fully cooked through with no pink remaining and it reaches an internal temperature of 165 F.
  5. Remove the skillet from the heat and let the chicken cool for 5 minutes so it doesn't wilt the herbs.
  6. In a large bowl, whisk together the lime juice, fish sauce, and brown sugar until the sugar dissolves.
  7. Add the warm cooked chicken to the bowl along with the sliced shallots, and toss well to combine while the chicken is still warm so it absorbs the dressing.
