Instructions

- Add the chicken pieces, making sure they're fully submerged, cover, and refrigerate to brine for at least 4 hours or up to overnight.
- In a separate large bowl, whisk together the flour, smoked paprika, garlic powder, onion powder, cayenne, black pepper, and remaining 1.5 teaspoons salt.
- Remove the chicken from the buttermilk, letting excess drip off but not shaking it dry.
- Dredge each piece thoroughly in the seasoned flour, pressing firmly so the coating adheres in a thick, craggy layer; place on a wire rack.
- Let the coated chicken rest at room temperature for 15 to 20 minutes so the crust sets and won't slide off during frying.
- Heat the vegetable oil or lard in a deep, heavy pot or cast-iron skillet to 325 F, using a thermometer to monitor closely.
- Fry the chicken in batches, skin-side down first, without crowding the pot, for 6 to 7 minutes per side for dark meat and 5 to 6 minutes per side for white meat.
- Monitor the oil temperature throughout, adjusting the heat to keep it between 300 and 325 F, until each piece is deep golden brown and the internal temperature reaches 165 F.
- Transfer the fried chicken to a wire rack set over a baking sheet to drain; do not use paper towels, which trap steam and soften the crust.
