Chicken Tinga
Shredded chicken simmered in a smoky chipotle and tomato sauce, piled onto tostadas or into tacos. A weeknight Mexican classic.
Ingredients
- 1.5 pounds boneless skinless chicken breasts or thighs
- 1 small white onion, half sliced and half diced
- 3 cloves garlic, 2 left whole and 1 minced
- 2 cups low-sodium chicken broth
- 2 tablespoons olive oil
- 1 (14.5 ounce) can fire-roasted diced tomatoes
- 2 chipotle peppers in adobo sauce, plus 2 tablespoons adobo sauce
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 8 tostada shells or corn tortillas
- 1/2 cup crumbled queso fresco
- 1 avocado, sliced
- 1/4 cup mexican crema or sour cream
Instructions
- Place the chicken, sliced onion half, whole garlic cloves, and chicken broth in a medium pot and bring to a boil over high heat.
- Reduce the heat to a gentle simmer, cover, and cook for 20 to 25 minutes until the chicken reaches 165 degrees F and is easy to shred with a fork.
- Remove the chicken to a plate, reserving 1 cup of the poaching broth, and let it cool slightly before shredding with two forks into bite-size pieces.
- In a blender, combine the diced tomatoes, chipotle peppers, adobo sauce, and the reserved 1 cup of poaching broth; blend until mostly smooth.
- Heat the olive oil in a large skillet over medium heat and add the diced onion, cooking for 4 to 5 minutes until softened and translucent.
- Add the minced garlic and oregano and cook for 30 seconds until fragrant, stirring so the garlic does not burn.
- Pour the blended tomato-chipotle sauce into the skillet and bring to a simmer.
- Cook the sauce uncovered for 8 to 10 minutes, stirring occasionally, until it thickens slightly and darkens in color.
- Add the shredded chicken and the salt to the sauce, stirring to coat every piece evenly.
- Simmer for another 5 minutes over low heat so the chicken absorbs the smoky flavor; the mixture should be moist but not soupy.
- Pile the chicken tinga onto tostada shells or into warm tortillas, then top with queso fresco, avocado slices, and a drizzle of crema.
